- Sortir le beurre à l’avance pour qu’il ramollisse. Concasser grossièrement les noix de pécan. Faire fondre le chocolat au bain-marie. Battre le beurre avec le sucre en poudre jusqu’à ce que le mélange devienne crémeux. Ajouter les œufs un à un en continuant de mélanger au fouet entre chaque. Ajouter la farine en mélangeant bien. - Faire la crème au caramel, faire fondre le sucre ds le beurre, obtenir une crème ambrée. Retirer du feu et ajouter la crème chaude, remuer et remettre sur le feu. Faire réduire jusqu'à l'obtention d'une crème caramélisée (15/20 mn). Faire tièdir. L'étaler sur le gâteau froid et mettre au frais
- Ganache montée à la vanille à faire la veille. Faire chauffer la première partie de la crème avec la vanille, verser sur le chocolat blanc coupés en petits morceaux et laisser reposer quelques minutes. Émulsionner er ajouter le restant de crème froide, remuer à nouveau, filmer au contact et mettre au frais
- Le lendemain monter la crème en chantilly, la mettre en poche (douille cannelée) et pocher sur le gâteau, ajouter les billes de chocolat
