- 15 cl vin blanc

- Pour la fondue de poireaux : Commencez par émincez une échalote. Mettre le cookeo en mode rissolage fort (ou casserole), ajoutez du beurre et faites revenir l’échalote. Ajoutez les poireaux, la moitié du cube émietté, 1 cac de moutarde, salez et poivrez. Mélangez le tout.
- Versez la moitié d’un verre de vin blanc bien mélanger puis lancer le mode sous pression pour 4mn. Puis laissez sur maintien au chaud le temps de préparer le reste. Avant de servir, ajoutez la crème bridelice et le jus de citron, salez et poivrez.
- Lavez la pommes de terre, faites la cuire dans une casserole d’eau en démarrant la cuisson à froid. Une fois cuite épluchez la et réservez la dans une boîte bien fermée. Il faudra la couper en rondelles (dans le sens de la longueur) avant de la servir.
- Pour la sauce : Émincez finement l’échalote, et faites la revenir avec un peu de beurre demi sel dans une casserole. Ajoutez aneth et vin blanc (15cl) et laissez un peu bouillir le tout. Ajoutez la crème liquide, jus de citron, baissez le feu et laissez le tout réduire. Pour le saumon : Nappez le saumon de la sauce (mais gardez en pour servir après) et faites les cuire 3 à 5mn selon la cuisson voulu dans une poêle bien chaude.
- Servir le tout ensemble en commençant par la fondue de poireaux puis les pommes de terres coupées en rondelles, de la sauce et le saumon.
