  1. Faire chauffer le lait avec la gousse de vanille fendue et la moitié du sucre. Mélanger les oeufs avec le sucre restant et les faire blanchir. Ajouter la maizena et bien mélanger. Verser la moitié du lait sur le mélange puis remettre le tout dans la casserole et faire cuire 2 min sans cesser de remuer. Débarasser dans un récipient en verre et filmer au contact puis laisser refroidir.

  3. Mélanger le beurre mou avec l'amande et le sucre jusqu'à obtenir un mélange homogène. Ajouter les oeufs et bien les incorporer. Ajouter la farine et le sel et mélanger afin d'obtenir une pâte. Filmer la pâte et laisser au frais pendant 2h.
  4. Montage : Lisser la crème au fouet et la mettre dans une poche munie d'une douille de 10cm. Séparer la pâte en 2 parties et étaler la première sur 4 mm d'épaisseur sur une feuille de papier sulfurisé. Découper un cercle de 24 cm de diamètre à l'aide d'un cercle à tarte beurré et déposer la feuille sur une plaque de cuisson. Avec l'excedent de pâte réaliser la bordure de la tarte. Piquer la pâte à l'aide d'une fourchette. Déposer la crème uniformément sur le fond de pâte.
  5. Étaler le second morceau de pâte et le placer au dessus de la tarte. Grâce au rouleau à pâtisserie couper la pâte sur les bords du cercle et ôter le surplus. Dorer la tarte puis décorer le dessus avec une fourchette. Cuire pendant 25 min à 180°C à chaleur tournante. Laisser refroidir avant de démouler.
