- Séparer les blancs des jaunes d’œufs. Dans un cul-de-poule, fouetter les jaunes d’œufs avec les 75 g de sucre et le sucre vanillé jusqu’à ce qu’ils blanchissent. Verser l’huile d’un coup puis continuer à fouetter jusqu’à incorporation complète.

- Laver, éplucher et tailler les pommes en gros dés. Verser environ la moitié de la pâte à gâteau dans un moule rond de 20 cm de diamètre préalablement graissé puis dispersé la moitié des dés de pommes. Recouvrir les pommes du reste de pâte puis terminer en dispersant l’autre moitié des dés de pommes.
- La pâte à crumble = Dans la cuve du batteur, mélanger les poudres avec le beurre bien froid coupé en morceaux à l’aide de la feuille jusqu’à obtenir une texture sableuse (cela peut-être fait à la main) Répartir le crumble sur toute la surface du gâteau puis cuire à 180°C pendant 45-50 min environ. Au moment de servir, vous pouvez saupoudrer de sucre glace.
