Ingredients and spices that need to be Prepare to make Moong Daal Ka Dahi Vada:
- 1 cup Yellow moong daal
- 2 cups Water to soak the daal
- 2 cups Thick and fresh Curd
- 8-10 Raisins
- 2 tablespoons Chopped cashews
- as per taste Salt
- 1 tsp Ginger and chilli paste
- as per taste Chilli powder, cumin powder
- as per taste Coriander powder and chaat masala
- 2 tablespoons Powdered Sugar
- 1/2 cup Sweet tamarind chutney
- 2 tablespoons Green chilli and mint chutney
- 1 tablespoons Hing
- 2 cups Hot water
- As needed Oil to fry
- 1/4 cup each To garnish: pomegranate pearls and sev (optional)
- as required Mint leaves to garnish
Steps to make to make Moong Daal Ka Dahi Vada
- First, soak the daal in warm water for 4 hours. Then drain and grind to a smooth paste without water.
- Then add salt and ginger and chilli paste and whisk well for 5 minutes till creamy and fluffy.
- Heat required oil in a kadhai. In another bowl make a mixture solution of hing and hot water and keep ready.
- When oil is moderate hot, add spoonfuls of batter and fry on medium flame till crisp and golden on all sides. Fry all the vadas in small batches.
- After frying, add each batch of vadas in the hing - water to soak and become spongy.
- Then remove from water, squeeze and arrange in a flat plate. Whisk curd, sugar, spices and salt till creamy. Add the dry fruits to curd and mix well.
- Pour the curd on top of the vadas and cover them well. Pour both the chutneys on top. Add more chilli powder, and cumin powder on top. Garnish with mint leaves, pomegranate pearls and sev and enjoy chilled.
